I've already told you guys of my super LOVE of avocados. I'm always trying to find a place to sneak them in. One place I haven't really thought about is breakfast. Ummm... why not!? Avocados are high in calories and fat but they are the GOOD kind of calories and fat. You're better off eating an avocado rather than cereal any day!
There is one really simple recipe that I want to try when I need a quick breakfast.
Avocado Toast Recipe:
2 slices of toasted bread
Optional: 2 slices bacon, cooked and halved or 2 tablespoons chopped tomato
Preparation: In a bowl, coarsely mash avocado with a fork; season with salt and pepper to taste. Divide avocado onto toast and spread to cover.
Super easy and super yum! My kind of breakfast.
