Chicken and Broccoli Quinoa


Chicken & Broccoli Quinoa

This meal is delicious. Quinoa is a great food to eat because it’s good for you AND tastes good. Win-win. I adapted this recipe from Jenessa's Dinners


Here is how I made it:
1 chicken breast
1 head of broccoli
3/4 Quinoa
Balsamic vinaigrette
Honey
Lemon Juice
Salt & Pepper to taste

Directions:

Put the quinoa in a sauce pan with 1 1/2 cups of water. Bring to boil and then reduce to a simmer and cover. In 10-15 minutes the water will be absorbed and the quinoa is ready.

Meanwhile sauté the chicken and broccoli . Dice the chicken breast up into cubes.  Saute with 3 tbsp balsamic vinaigrette, 1 tbsp honey,  1 tbsp lemon juice, and salt and pepper to taste.

While the chicken is cooking, mix together 6 tbsp balsamic vinaigrette, 3 tbsp honey, 1 tbsp lemon juice.

When the chicken is done, mix together the quinoa, chicken and broccoli, and the dressing.

And presto, you have a delicious meal!
