Zesty Homemade Hummus


Hummus

As you guys know, I am a dietitian.  That doesn’t mean I always eat healthy…but I definitely try.  Hummus can be expensive for a small portion at the grocery store, so I love making my own zesty homemade hummus.
I have made the recipe “zesty”by adding extra lemon juice and more garlic than most recipes require.  If a recipe calls for 2 cloves of garlic, it is very likely that I will use 4 or 5!  I love my garlic!

Hummus 1

Here are the ingredients:
1 15oz can of Garbanzo beans(Chickpeas)
3 gloves garlic (whole head shown in picture)
Juice of 2 Lemons
2 Tablespoons Tahini
2 Tablespoons Olive oil
1/4 teaspoon salt
Tahini is a sesame paste that can be found on the International aisle at most large grocery stores.  Although it is the most expensive ingredient on the list, you only need 2 Tablespoons per recipe and it stays fresh in the refrigerator for months.  Definitely worth the purchase versus buying overpriced, premade hummus from the grocery store.

Hummus 2

Place all of the ingredients in a blender or food processor.  I LOVE this mini Ninja my mom got me for Christmas one year.  Helpful hint….this small blender will not fit 2 cans of chickpeas for a double recipe.  I learned that the hard way Sad smile.

Once all the ingredients are added, blend until smooth.  You can even add a few Tablespoons of warm water or juice from the beans if you want an even creamier hummus.

Here is the finished product!!  I enjoy my zesty hummus with colorful bell pepper & carrots most often.  It is also delicious stuffed in a chicken breast, on tortillas or pita chips, and as a replacement for mayo on a sandwich.
