While everyone agrees that milk is good for you, some types of milk are more popular than others. A recent study found that 65% of milk consumed worldwide is goat milk. This might come as a surprise to people whose only experience with goat milk is through goat milk formula and eating feta cheese. But the fact is goat milk is more suited to the human body and it has a smaller environmental footprint.

It’s no surprise then that while cow milk has been the go-to milk for centuries, goat milk is becoming more and more popular among consumers. Especially for those who are health conscious and prefer organic and easy-to-digest milk. But why goat milk? Well, the answer is more than just its good taste or the fact that it’s naturally homogenized that makes goat milk the number one choice globally. Drinking goat milk is a healthier choice than consuming cow milk for the following reasons:


1- More Calcium, Less Cholesterol
When it comes to nutrients, goat milk has more calcium and mineral than cow milk. And if you’re looking to get an energy boost from your milk, goat milk has 35% energy-rich chain fatty acids compared to 15% in cow milk. These fatty acids are low in cholesterol and don’t get stored in the body as fat. There’s more. Goat milk and goat milk formula help raise the levels of good cholesterol while keeping the bad cholesterol in check. Moreover, goat milk has the same healing properties as olive oil and can help treat intestinal disorders and coronary diseases.


2- Fewer Allergenic Proteins And Less Inflammation
For people who are lactose intolerant, what gives them trouble is a certain protein called A1 casein which is found in cow milk. This protein which has about 20 allergens is responsible for many allergies among children including abdominal cramping and even causes colic in babies. For adults, A1 casein is highly inflammatory and causes irritable bowel syndrome and colitis. On the other hand, goat milk doesn’t cause these issues because it’s lower in lactose and rich in A2 casein. A2 casein causes none of these inflammatory side effects. 3- Easy To Digest
Because goat milk has more chain fatty acids and smaller fat globules it is easier to digest goat milk than cow milk. Also, cow milk has 10% curd compared to 2% in goat milk. That’s because cow milk has agglutinin and big fat globules which break into free radicals when homogenized by the dairy industry. You don’t get this problem with goat milk or goat milk formula because it’s naturally homogenized. Goat milk also has smaller fat globules and contains no agglutinin.

The Vegan Duchess’ menu combines tones of superfoods and we all know how good these are to maintain proper health and prevent aging.

The first name that comes to mind when thinking of superfoods is Kale, a dark leafy green vegetable that is high in iron, calcium and anti-oxidants. While most people are not big fans of the taste of kale, they rapidly change their minds once they try our kale chips, Asian kale salad or the delicious green protein machine smoothie.

Nutritional Yeast is an inactive yeast that is grown on beet molasses. It is a complete protein, very high in B vitamins and fortified with vitamin B-12. Enjoy it on our cheesy kale chips, almond “parmesan”, or marinara sauce.

Chia Seeds are small seeds that are an excellent source of B vitamins and calcium, iron, magnesium, phosphorus, and zinc. Soak them and they triple their size, taking on a tapioca-like consistency. Enjoy it in our chia salsa or chocolate chia pudding.

Buckwheat is a gluten-free “pseudo” grain (from the rhubarb family) that is high in protein and B vitamins. We use it dehydrated in our pizza crusts or granola.

Raw Cacao is one of the highest sources of anti-oxidants available to human consumption. Chocolate chia pudding, hot chocolate, chocolate granola are only a few of the raw cacao containing foods on The Vegan Duchess menu.

Wheat-Free Tamari is a type of soy sauce that is gluten-free and alcohol-free. It is lower in sodium than traditional soy sauce and provides niacin (vitamin B3), manganese, and mood-enhancing tryptophan, besides antioxidants and some benefits to the digestive tract, according to some studies. Enjoy it in our Asian kale salad or almond clusters on your raw pad thai!

Maca is a Peruvian root that has a malt-like flavour. It is said to be good for balancing hormone levels, energy and even increasing libido. Our mega popular raw pad thai comes with a Maca sauce.

SPICY ALMOND BITS

 

  makes 2 cups

Ingredients:

  • 2 cups soaked almonds
  • 3 tbsp wheat free tamari
  • 2 tbsp agave nectar
  • ½ tsp ground cumin
  • ¼ tsp chili powder
  • ¼ tsp fine sea salt
  • Pinch cayenne pepper

In a food processor add the soaked almonds and pulse 8 to 10 times.  Add the tamari, agave, cumin, chili powder, salt and cayenne.  Pulse the mixture another 8 to 10 times.  Transfer to a dehydrator and dehydrate at 114° for 3 to 4 hours or until dry, allow mixture to cool and store at room temperature. Enjoy on top of most main dishes and salads or as a snack on its own!
